Webinar Day 2: Is Regional Cuisine Traditional or Innovative?

On October 19, the 2nd day of “The Food Culture in the Azores” Webinar tackled the question “Is Regional Cuisine Traditional or Innovative?” with José and Anne Pereira, owner-chefs of Õtaka Restaurant; Rosa Cabral, manager of the A Cagarrita brand; and Julien Floro, representing Myrica Faial Permaculture Farm. For two hours, the moderator and reporter, Carlos Rodrigues, took us on a journey of discovery through the fantastic stories of the invited guests, their perspectives on our traditions and, most especially, their views on the future of Azorean cuisine.
