The third day of “The Cuisine of the Azores” Webinar focused on “Gastronomy Under Study” with the participation of Gilberto Costa, who teaches at the Estoril Higher Institute for Tourism and Hotel Studies, in Mainland Portugal; Helena Juliano, hotel manager and researcher; and Carlos Moniz, food hygiene and safety specialist at INOVA (Institute for Technological Innovation of the Azores). These guests are all professionally involved in gastronomy and connected to the Azores, whether by birth or from the heart. The result was a hearty conversation, with “no beating around the bush,” led with mastery by the moderator, Graça Moniz, communications professional. At the end, we all wanted more!
